Daemons are representations of your soul/mental constructs. They are not real or physical, but they are very much a part of you. We often assign animals to our daemons because we can associate with animals best.

Daemons have been around as an idea for centuries, possibly as old and cultural as the Indian American and greek astrological signs, though are less known. Physcologist Carl Jung explained the idea not only behind MBTI (Myers Briggs Type Indicator, a personality indicator based on four temperaments and cognitive functions) but also behind imaginary friends. While they are similar, imaginary friends are not the same as daemons.
Popularised [though not invented] by Philip Pullman, author of His Dark Materials, daemons have become more and more known about in culture. A daemon is an embodiment of who you are, your personality, an imaginary animal that is as much a part of you as you are of it. We asign our daemons a name, gender and a form. When someone (note that unless you are older than 18 you cannot be settled) does not know their form or have various forms, we call them unsettled. There are many different terms which I will go into later.
So in summary daemons are your mental companions, guardians and often sarcastic know it all imaginary (yet very much a part of us) animals.
